Why is pH important in wine making?
pH is measured throughout the winemaking process from grape to glass.
pH is critical to winemaking, not only because it influences other parameter measurements, but because it can affect every single step (crush, fermentation (all types), aging, blending, bottling, and shelf-life. Improper pH can cause undesirable microorganisms to thrive, stuck fermentations, off flavors, and textures.
